Yes, I know….we all love that express place. But it’s all the way across town and DoorDash is too dang expensive. This recipe is just as good, give it a shot and see!!!

🛒 Ingredients

  • 2 lbs chicken thighs, diced
  • 1 cup jasmine rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • ½ tsp garlic powder
  • ¼ cup green onions, chopped
  • Salt & pepper, to taste

👨‍🍳 Instructions

  1. Cook the rice
    • Prepare jasmine rice according to package instructions
    • Set aside
  1. Cook the chicken
    • Heat olive oil in a skillet over medium-high heat
    • Add diced chicken
    • Season with salt, pepper, and garlic powder
    • Cook 6–8 minutes until browned and cooked through

  1. Make the sauce
    • In a small bowl, whisk together soy sauce, honey, and grated ginger
  1. Bring it together
    • Add pineapple chunks to the chicken
    • Pour in sauce
    • Stir and cook 2–3 minutes until heated through
  1. Serve
    • Spoon over rice
    • Top with chopped green onions
