- 2 lbs chicken thighs, diced (thighs don’t tend to dry out like white meat!)
- 1 cup jasmine rice
- 1 cup pineapple chunks (fresh or canned)
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp ginger, grated
- ½ tsp garlic powder
- ¼ cup green onions, chopped
- Sesame seeds, if desired
- Salt & pepper, to taste
👨🍳 Instructions
- Cook the rice
- Prepare jasmine rice according to package instructions
- Set aside
- Cook the chicken
- Heat olive oil in a skillet over medium-high heat
- Add diced chicken
- Season with salt, pepper, and garlic powder
- Cook 6–8 minutes until browned and cooked through
- Make the sauce
- In a small bowl, whisk together soy sauce, honey, and grated ginger
- Bring it together
- Add pineapple chunks to the chicken
- Pour in sauce
- Stir and cook 2–3 minutes until heated through and thickens.
- Serve
- Spoon over rice
- Top with chopped green onions and sesame seeds
